Part 182PART 182—SUBSTANCES GENERALLY RECOGNIZED AS SAFE

Part 182 outlines substances generally recognized as safe (GRAS) for their intended use in food, including common ingredients, spices, flavorings, and substances migrating from packaging. It defines good manufacturing practices for GRAS substances and notes that GRAS status may be reevaluated and moved to other regulatory parts.

What this part covers

  • Lists common food ingredients like salt, pepper, vinegar, baking powder, and MSG as safe.
  • Includes spices, essential oils, oleoresins, and natural extractives recognized as safe.
  • Specifies synthetic flavoring substances and adjuvants that are GRAS.
  • Addresses substances migrating from cotton and cotton fabrics used in dry food packaging.
  • Defines 'good manufacturing practice' for GRAS substances, emphasizing quantity limits and appropriate food grade.
  • States that substances whose GRAS status is reevaluated will be removed from this part and issued under new regulations (e.g., affirmed GRAS, food additive, prohibited).
  • Clarifies that inclusion of nutrients does not imply a finding of usefulness as a human dietary supplement.
